This simple recipe is quick to make and produces light, fluffy eggs every time. Dress it up with other ingredients or just enjoy plain!


  • 6 Eggs
  • 3 Tablespoons Water
  • 1/4 Teaspoon Salt
  • 1/8 Teaspoon Pepper
  • 1 Tablespoon Olive Oil
  • 1 Tablespoon Butter
  • Parsley (optional)


  1. Crack raw eggs into a deep bowl or measuring cup.
  2. Add salt, pepper and water. Whisk together until smooth with a creamy appearance (about one minute).
  3. Heat oil and butter together in a non-stick pan over low-medium heat until hot.
  4. Pour egg mixture into heated pan. Fold and turn the eggs gently with a heat-resistant rubber scraper. Stir constantly till eggs are cooked through - about 2-3 minutes.
  5. Remove from heat and sprinkle with parsley (optional).
  6. Serve and enjoy!*


Good with fruit, yogurt, toast, cottage cheese, sliced tomatoes, and/or avocadoes.

Egg protein is light and delicate - and easy to overcook! Use low to medium heat and avoid browning.

This is a great base to use with other ingredients. Try sauteing onions, diced ham, or mushrooms in the pan first, then add the eggs. Or top the scrambled eggs with shredded cheese, then cover a couple of minutes while it melts. Delicious!
